5 Ingredient Challenge

I really wasn't in the mood to cook dinner the other night, but wanted something homey... I decided to do my own spin on Rachael Ray's 5 Ingredient Challenge that she showcases each month in her magazine. This is what I came up with...  Cheesy Rice, Broccoli, and Chicken Casserole!

Total: 30 minutes
Serves: 2


Ingredients:Green Giant Cheesy Rice & Broccoli 12 oz. package
leftover chicken
1/2 cup frozen peas
1/4 cup Shredded Carrots 1/2 cup French's French Fried Onions 1. Microwave the Cheesy Rice & Broccoli according to package.

2. While Cheesy Rice & Broccoli is cooking dice or shred chicken, and turn your oven on to 350 degrees F.

3. In a microwave safe container add frozen peas, shredded carrots and microwave for 30 seconds.  Add chicken and cook with lid vented for another 30 seconds.


4. In an oven safe pie plate add cheesy rice & broccoli, and contents from microwave safe container. Stir until everything is mixed together. Top with french fried onions.





5. Bake at 350 for 15-20 minutes until onions are golden brown and everything has married together.


6. Dish out and enjoy!

Side suggestions:  garlic bread and side salad
