A childhood favorite: besitos de coco (coconut kisses)
Since I was a child I have loved the adorable name of this dessert... and the taste! There is something about the sweetened coconut that I adore; actually come to think of it, I love coconut period. It's the island girl in me ;-) Besitos de coco, which translates to "coconut kisses" is an easy recipe that always brings back memories of my childhood at grandma's house. I used to help her make these and it never failed that there would be a "sticky hands" incident, as in sticky hands everywhere. This is a fun recipe to make with kids as long as you don't mind stickiness everywhere...lol. The other beauty of this recipe is that you can add many things like nuts, or drizzle them with chocolate, to dress them up. In our house we make them plain and they are delicious just like that.
Here is the super simple recipe: Ingredients 2 / 3 cup all-purpose flour 5 ½ cup shredded coconut ¼ teaspoon salt 1 can condensed milk 2 teaspoons vanilla Directions Preheat oven to 325° F.In a bowl mix the flour, coconut and salt; then add the milk and vanilla. Using your hands mix the dough (here is where the sticky hands come in) Using a spoon, spoon enough mix to make balls the size of a lime, and place them in a piping bag with a big star attachment. THEN place in the baking sheets.Bake for about 20-22 minutes or until golden brown. Remove from oven and let cool on the baking sheet for about 10 minutes and then place on a wire rack to cool.Give the besitos de coco a try. We can all use some sweetness in our lives! Buen apetito!
