Apple Pancake
This pancake is not like the ones that are tossed over the frying pan. It doesn’t come in individual flapjacks but in a pie pan. It’s different. I stumbled upon this recipe from Pillsbury and thought to give it a try. Didn’t regret Ingredients (for bottom of pan): 0.25 cup butter 1.5 cups thinly sliced apples with skin removed 0.5 cup sugar ( I used brown for the “caramel” look) 0.5 teaspoon cinnamon powder Ingredients (for pancake): 1.5 cup all-purpose flour 1 cup milk 1 egg 1 tablespoon baking powder 0.75 cup water 1 teaspoon vanilla essence 0.5 teaspoon cinnamon powder Ingredients (Topping): 1 tablespoon brown sugar 0.5 teaspoon cinnamon Method: Preheat oven to 180 deg Celsius. Melt butter over low heat, add in the rest of the ingredients for the bottom of pan. Bake at preheated oven for 10 minutes. This will cook the apples. In a medium bowl, combine all the pancake ingredients well. Pour the batter evenly over the cooked apples. In a small bowl, combine the ingredients for the topping. Sprinkle the mixture over the batter. Bake another 20-30 minutes in the oven or until skewer comes out clean when inserted in the centre. Let stand for 5 minutes and invert onto serving plate. The caramelised apples now become the top of the pancake. To serve, cut into wedges. There you go, no need maple syrup, no need butter. The caramelised apples serve as a sort of syrup for the delicious pancake layer at the bottom. related searches : Apple
