Busy week!

By Blog of Shannon (Visit website)

I've had such a busy week!  I'm glad tomorrow is Friday.  On Monday & Wednesday I went to Jacksonville for class, and Tuesday & today I went to Gainesville for work.  I'm putting the miles on my car that's for sure.  Let's start with yesterday morning.  I did 40 minutes of Jillian Michaels Yoga Meltdown on Comcast On Demand.  It's a great workout.  I was literally dripping sweat onto my yoga mat.  After sweating, breakfast:

Pomegranate Chobani1 tsp chia seedsBananaGranolaOrganic strawberries
With hot weather, I've been craving salads like no other.  Lunch:

SpinachCucumberYellow pepperTomatoOlives1/2 cup chickpeasSunflower seedsGarlic nuggetsFrench tomato dressingSunflower seed & Oat crispbread
This salad did not disappoint.  It kept me full for hours!  I had class last night, but didn't take a sandwich like I have been on school nights.  Two reasons: 1. I had to get back to work to do an interview. 2. I was too lazy ;).  I ate an apple for an afternoon snack, went to class, had a good time learning about stocks, options, capital allocation markets, investing, etc., and then came home to EAT:

Leftover apricot chicken from Olive Garden on TuesdayBroccoliCauliflowerSun-dried tomato hummus
I was still hungry after I ate this so I had 1/2 cucumber with some more hummus and a scoop of peanut butter.

This morning I went on a quick 3.3 mile run and ate this:

1/3 cup oatmeal, almond milk, waterDash of sea saltSplash of vanilla extract1 tsp ground flaxBananaGranolaGallberry honey (THEE best honey in the WORLD!--and it's local!)
Right after I ate this I got a phone call that the systems at both of my clinics were down.  No internet, no scheduling system, no medical record system, nada.  After an hour of phone calls, all systems were go :).  I had a 12pm meeting in Gainesville about who I will now answer to since my old boss retired.  I'm still processing this new information.  After my meeting was over, I immediately went running to my old boss/mentor.  My sister-in-law, Anna, and my best friend's mom both work for my old boss so I was able to see all 3 of them which really boosted my spirits.  Needless to say, my mind was too busy digesting the news, and I didn't even realize I was hungry until around 2pm.  I stopped by Mother Earth and picked up lunch:

Carrot, beet, apple + ginger juice (the ginger made it spiiiicy)Veggie wrap (carrots, raisins, spinach, green onions, cheddar cheese, green pepper, sunflower seeds and dressing in a spinach wrap)
I had another meeting so I had to scarf this down.  I ran by the mall to pick up my dad's Father's Day gift (no such luck in finding it) and ended up being late for my meeting...oops ;).  The second meeting wasn't nearly as big a deal as the first so I wasn't too concerned.  Once I got home, Thad was collapsed on one side of the couch, so I decided to join him on the other!  Then, I made dinner.  A few days ago, I picked these up from the Greenwise freezer section at Publix:

and decided to make them tonight!  I threw them on the Foreman for about 5 minutes and voila! dinner was ready.  As I mentioned earlier, I've been craving salads lately and tonight was no different:

DEEEELICIOUS!  I was still a bit hungry after eating this:

Chocolate VitaTop with coconut butter as frosting on fine china aka a napkin.

Off to sleeeeeeeeeep!

Funny fact: I blog all day in my head, but when it's time to actually type out the post, I'm too tired to remember all the funny thoughts I had throughout the day.
