Campfire brownie ice cream cake

s'mores, campfires, and the great outdoors. what could be better than that? here is a campfire brownie ice cream cake that tastes like a giant gooey roasted marshmallow. enjoy! campfire brownie ice cream cake recipe courtesy www.recipegirl.com ingredients brownie layer: (shhhh..you can also use ghiardelli's box mix...) 4 oz bittersweet chocolate, chopped 1/2 oz unsweetened chocolate 4 tbsp unsalted butter 1/3 cup all purpose flour 1/4 tsp baking powder 2 large eggs 2/3 cup granulated sugar 1 tsp instant espresso powder 1/8 tsp salt ice cream layer: 1 1/2 quarts ice cream, any flavor (i used ben & jerry's peanut butter cup ice cream) marshmallow layer: 1 cup fluff 1 tbsp water 4-5 cups mini marshmallows topping: hot fudge (homemade, or use smucker's microwavable hot fudge) first you have to prepare the brownie layer. prepare the box brownies as per the instructions. otherwise, preheat oven to 350 degrees. grease the bottom and sides of a 9" springform pan. in a microwave safe bowl, heat chocolates and butter together in 20 second increments until just melted. stir until smooth. sift together flour & baking powder. in a large bowl whisk together eggs and sugar. whisk in chocolate mixture. add the dry ingredients, espresso powder, and salt. stir until combined. spread brownie batter in the prepared pan. bake until a toothpick inserted in the center comes out clean, about 15 minutes. cool completely before continuing with the recipe. important note #2: if you take a little segment of brownie from the middle of the pan no one will know...except for bonk. it will get covered up with ice cream later. once the brownies are cool, take the ice cream out of the freezer and let it soften a bit. you need it to be spreadable. spread the ice cream over the brownie layer. in a medium bowl, whisk together the marshmallow cream and water. stir in 3 cups of marshmallows. spread the marshmallow mixture over the ice cream. sprinkle the remaining marshmallows on top. freeze until the ice cream is hard, at least 6 hours, but preferably overnight. once you are ready to serve your campfire brownie ice cream cake of awesomeness, whip out your blow torch. run a knife along the inside edge of the springform pan, and release your cake. torch the marshmallows until they are golden brown. trying not to set fire to gretchen's condo serve with hot fudge. effing noms!!! how many drunk chicks does it take to cut a cake?
