Caramel Filled Chocolate Chip Cupcakes

In a feeble attempt at curbing our spending and appreciating the simple savings one can muster up in a time of a worldwide economic downturn, I have gracefully volunteered to keep my hands off of my household?s grocery shopping. Ok heck no. I have banned myself from doing the grocery shopping! It seems that while other women find joy and comfort in luxury shopping? I am of a different breed... one of those who find inexplicable joy in grocery shopping. Now how sad is that? My simple joy? grocery shopping? and I am on a self-imposed ban. I never thought I?d see the day. But then, well? surprise, surprise. That day has come.



I have had to resort to asking my husband to do the shopping? and he decides what goes into my baking pantry. It?ll be a surprise, he says. Excited, I wait for him to get back. So what?d you buy? What?d you buy, I ask. I gooooott? Chocolate chips!! *Chocolate Chips? Chocolate chips? But I?ve got Chocolate Chips!!!* His smile turns into an upside down smile. Poor guy.



I've recently been toying with the thought of ditching my love affair with the giant green bus and instead taking the train to save on my transportation costs. But I haven't been all that successful in putting that idea into action. Taking the train will mean walking... and walking... and walking... and the thought does not appeal to me at all. The weather and I have not been very good friends lately, and it really hasn't done anything to make things up to me. I think the folks at the train company need to re-think they're marketing strategy. They haven't quite won me over just yet.

Ooh! We were invited to a surprise birthday party on the weekend. Yay! How old was the celebrant, someone asked me when I told them I attended a surprise party on the weekend. Urmm: 40. Heehee... cute! Surprise!!! I haven't done that in a loooooong time.



Wondering what to bring... again, I turned to my pantry. There wasn't a lot in there.. but hey!! I had a bag of chocolate chips!! And then I thought... ooohh... caramel!! And so it became: Caramel Filled Chocolate Chip Cupcakes. Oh my!! After a bite... I was gone. And so was the rest of the cupcake!! :)



Cupcakes:
3 Eggs225g Butter, Softened1 Cup Caster Sugar1 Teaspoon Vanilla130g Dark Chocolate Chips1 Teaspoon Cocoa PowderCaramel Filling:100g Butter100g Brown Sugar4 Tablespoons Golden Syrup2 Tablespoons Fresh Milk
Chocolate Frosting:25g Butter30g Cocoa Powder175g Icing Sugar4 Tablespoons Milk

Preheat the oven to 160 degrees C, and line a cupcake pan with cupcake liners. This recipe yields 24 standard cupcakes. So if you've got the pans handy, then go for it. I had to do several batches.

In a bowl, beat the eggs at low speed, adding the butter and sugar until light and creamy. Using a wooden spoon, mix in the flour, milk and vanilla. Fold in the choclate chips and vanilla.

Divide the mixture into 24 standard cupcake liners, and bake for 18-20 minutes or until it has risen and is firm to the touch. Cool in a wire rack.

When cool, "core" the cupcakes by cutting little deep holes in the middle and set aside.

Meanwhile, prepare the caramel filling by melting the butter in a saucepan. Add the sugar and golden syrup and bring the mixture to a boil at 230 degrees F. or just until the texture is thick enough to coat the back of a wooden spoon and is the color of caramel. You will know it is ready when the mixture starts to swirl around with the spoon. Remove the sauce from the heat and conitnue stirring. Slowly add the milk, all the while mixing the sauce. Return the mixture to the heat for a minute or two, just until it starts to thicken again. Remove immediately and set aside.

Now prepare the chocolate frosting. Melt the butter in a saucepan and stir in the cocoa powder until combined and there are no lumps. Remove from the heat and mix in the icing sugar and milk. Returnt the mixture to the heat and mix, mix, mix until it looks glossy and yummy. Remove from the heat and set aside.

Go back to the cupcakes, and fill each one with the caramel filling. Top it off with the little cored cakes. Top with the chocolate frosting.

If you can wait a day... wait! The filling get nice and chewy. If you can't... it's still good. Haha! Enjoy! :)
