Chocolate Peanut Butter Fudge Cookies (No Bake)


A very unattractive cookie, but don’t let the look of them fool you. They are addictive! These are so quick and easy,  awesome to make with the kiddos. I used smooth peanut butter and dry roasted peanut, but you could omit the peanuts all together or use crunch style peanut butter.


*Note: From now on I will be including full sugar versions of my sweets recipes.


Just keep in mind that the pictures for the recipes will be of the no sugar version, so your result w/full sugar version will look a bit different.


Ingredients (no sugar)———————-Ingredients (sugar)


1 c Splenda                                               2 c sugar
1/2 c milk                                                 1/2 c milk
1 stick butter                                           1 stick butter
3 tbsp cocoa powder                               3 tbsp cocoa powder
1/2 tsp vanilla                                         1/2 tsp vanilla
3 c quick cook oats                                  3 c quick cook oats
1/2 c peanut butter                                 1/2 c peanut butter
pinch of salt                                             pinch of salt
1 c dry roasted peanuts (opt.)              1 c dry roasted peanuts (opt.)



Instructions


In a large bowl, combine oats, peanut butter, and peanuts. Mix together until peanut butter is evenly distributed on the oats. Set aside.


In a medium saucepan melt butter on med. heat. Add milk, vanilla, splenda or sugar, cocoa powder, and a pinch of salt. Stir with a wire whisk until smooth. On medium heat, bring to a full boil, stirring almost constantly to avoid burning. After you reach a full boil remove from heat and pour into oat mixture. Mix well to coat all the oats.


Scoop mixture using a cookie scoop or a tbsp. If using a tbsp do a heaping scoop. Drop them onto wax paper. I used a scoop and left them round, but you could shape these into any shape you like. Let cool on counter.


When completely cool transfer to refrigerator.


Makes abt 24 cookies
