Christmas spicy nibble.
Today I started feeling Christmassy for the first time this month. I think it was the combination of Speculaas yesterday and Christmas spicy nibble today - or just that I was feeling slightly better. Stupid cold.
Perhaps it was the bouquet that my sister and I made. It's not quite Christmas without a flower arrangement [with oasis] on the table. Aren't my Grandma's roses pretty? ![]() ![]() And now for Christmas spicy nibble. We always make heaps, as you can see by the haul of peanuts below. Because Christmas food is not only about taste but about tradition and family, I'll share the recipe with you. Perhaps it'll become your family's Christmas tradition too? Who knows, we're constantly making new ones. ![]() Christmas spicy nibble: Ingredients: roasted curry peanuts caramel popcorn glazed cherries For the peanuts put 1kg of raw peanuts, 150gms of butter and 4tbsp of gf curry powder in a large roasting dish. Roast nuts for 45 minutes at 180`c. Stir often - make sure they don't burn. Cool to room temperature. For the caramel popcorn:I think stove popped popcorn is better than machine stuff because you get less kernels. Anyway, pop your popcorn however you do it and put it all in a big bowel or heaps of serving bowls if you haven't got one. Whatever. It's caramel popcorn, not rocket science. The amount of popcorn you make doesn't matter, Christmas spicy nibble isn't precise - it's just yummy. 100gms of butter 1 c of white sugar 2 tablespoons of honey Put them all into a medium sized pot over the stove and stir together till melted. Let it boil for about five minutes or until brown, stirring the whole time. Pour the caramel over popcorn and mix quickly. You may need minions [see above picture] for the stirring part. Let the caramel harden before combining all the ingredients. This is all the ingredients on the table. We usually add noodles to it, but they aren't gluten free so I make a special box especially for me and the coeliac sister. Note all the cherries on the chopping board? - don't add too much unless you love cherries. Mix all of the ingredients together and store in whatever way you like best. The Tupperware box on the left is the gluten version and the bag on the right is my bag full.We ate heaps of Christmas spicy nibble tonight while watching Die hard - it's a Christmas movie, haha, good excuse hey?
