Cut the rosemary sprig:
- if you want it to protrude from the glass, cut above the glass rim
- if you don't want it to stick out, cut lower down.
Place the sprig in the glass so that the rosemary sprigs point downwards.
Cut a piece of wire longer than the diameter of the glass rim. Loosely tie a knot in the center. Insert the end of the rosemary sprig (placed at the top of the glass) into the knot and tighten.
Stick two pieces of tape on each end of the wire.
Pour water into the bottom of the glass, add the pink berries, then plant the rosemary fir in the center, upright, and glue both ends of the thread to the edges of the glass. Place the glass in the freezer, upright, for at least 4 hours.
Take the glass out just before serving (this step is important to ensure that the ice cube sticks to the bottom of the glass when serving). Pour in gin (alcoholic version) or elderflower syrup (non-alcoholic version). Fill the glass with tonic or sparkling water.
Add a star anise (or cinnamon stick) if desired, and voilà, your Christmas cocktail is ready to serve and enjoy!
