Citrus-Poached Haddock

After meeting with my trainer a few times and working my butt off at the gym I decided to make some fish for dinner for a leaner alternative. She suggested that we try to eat fish three times per week if possible as it is so good for you with the omega 3 fatty acids and a lean way to ingest some protein. I tried this really yummy recipe from the G.I. Cookbook and it turned out so good! I was impressed... Not fishy tasting AT ALL and really flavorful.
Ingredients:
2 cloves garlic, minced
1 small onion, finely diced
1/4 cup orange juice
1/4 cup white wine or vermouth
1 Tbs. lemon juice
1 tsp. lemon zest.
1/4 cup chicken, vegetable or meat stock
2 boneless haddock filets or any white fish you may have on hand
Salt & pepper to taste

Directions:
In a large skillet bring garlic, onion, orange juice, white wine, lemon juice and zest to a boil and reduce the liquid by half. About 5 minutes.
All ingredients addedMoisture reduced by half- ready to add the fish.
Add stock and resume boil. Add fish and turn heat down to simmer and cover for 10 minutes or until fish is flaky and ready to serve. 
Remove fish from pan with a slotted spoon and then add salt, pepper and another 1/4 cup of stock and reduce. Pour sauce over fish.

I also grilled up some zuchini with olive oil and Greek rub and cut up some tomatoes and drizzled with olive oil, balsamic vinegar and a few cubes of Laughing Cow light cheese.... Ah diets.. hehe
