Citrus Snapper with Parma Ham in Pasta

Saturday's dinner continues the effort to eat a little better this week - Mr T was really ill on Monday, was a long suppressed flu combined with being out in this scorching hot sun! Swear it's been almost 40 degree celcius, i'm pretty sure they stop reporting the temperature past 33 degrees.

This was surprisingly yummy and photogenic, considering it was a fridge clearing sort of concoction.
