Cookie Dough In A Cup -Gluten Free, Dairy Free, and Sugar Free

This recipe is adapted from The Spunky Coconut's chocolate chip cookie dough.  Kelly used a combination of almond flour and coconut flour.  I wanted to use all coconut flour because I accidentally ordered (in bulk) coconut flour twice.  Oops!  And now I have a ton of coconut flour. 









Almond flour and coconut flour act very differently.  While almond flour is more moist than most gluten free flours, coconut flour is more dry.  I had to change the amount of liquids quite a bit.  I also omitted several ingredients and added another.  Anyway, the recipe came out quite different, but the spirit of it is the same.



3/4 cup applesauce

1.5 Tbsp chia seed meal

2 tsp gluten free vanilla extract

1/4 cup honey

2 Tbsp molasses

1 cup coconut oil, melted

2 pinches of pure stevia powder

1 cup coconut flour

1/4 tsp salt

2 tsp baking soda

1 cup carob chips**** or dairy free, gluten free chocolate chips



In separate bowls whisk together the wet ingredients and dry ingredients, except for carob or chocolate chips.  Add dry ingredient mixture to wet and mix thoroughly.  Stir in carob or chocolate chips and spoon into bowls.  Don't want it in a bowl?  Roll them up into little balls and throw them like my 19 month old.  Don't do the last part.... at least if your children are watching.  Chill for an hour and serve!



Notes: 

1) When you first add the wet ingredients to the dry, it will seem like the dough is too wet.  Don't worry, the coconut flour is very thirsty, and right before your eyes, will drink up the extra liquid.

2) The coconut flour will continue to drink even when you are ready for it to stop.  If you have leftovers that you want to keep, you will have to do a little doctoring, because it will dry out over time.  When you are ready to dive into what's left, gradually stir in the non-dairy milk of your choice a Tbsp at a time until you acheive that doughy consistency again.  If it is no longer sweet enough, add just a tiny pinch of stevia and mix again.





I love raw cookie dough, but my family can't enjoy the kind in a tube.  First of all, it has yucky ingredients.  Second, it is not gluten free.  Third, one of my children has a food intolerance to chocolate.  Is there dairy in there too?  That makes four reasons we can't eat it. 



I hope you make this and enjoy it as much as we do.  Reminiscent of licking the beaters as a child, or later in college, spooning the yummy ready-made dough from a frozen tube, this dessert is a sure winner!











****Be sure to get the healthy carob chips.  I was so glad I decided to read the ingredients listed on the couple of packages I was choosing between at Whole Foods.  One had several things in it that I'd rather my kids not eat and the other one was great.  It even uses beet sugar for sweetener.  These are the ones I got.
