Ingredients:
For 16 bites
225g almond powder
100g granulated sugar
2 egg whites
1 teaspoon of cinnamon powder
1 pinch of tartar cream

Preparation:
1 - Preheat oven to 160° C. Line a baking sheet with parchment paper. Set aside.
2 - In a bowl, stir almond powder with half the sugar and the cinnamon.
3 - In another bowl, beat the egg whites on low-medium speed with an electric hand whisk until foamy. Add the cream of tartar and keep beating. Turn the speed up and start to add the other half of the sugar, a little at a time, and continue to beat until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
4 - Add gently the meringue to the almond mixture.
5 - Roll the balls with your hands or use two teaspoons (It's easier with wet hands but it's really up to you! I would recommend you have a bowl of water near by). Drop about the equivalent of a large teaspoon of dough onto the prepared baking sheet. Bake about 12 - 14 minutes. The bites need to be still soft when out of the oven. Cool completely on wire rack.
