Early Spring Cleaning
![]() Good Evening! The day flies by when you are having fun... or not, I decided to take this opportunity to get organized before school starts. I don't know if I have shared this with you but I am organizationally challenged. My husband says you would never guess it by my appearance but I am a huge slob...well maybe not that bad. Honestly, I loved the line in the Julie & Julia movie when Julie says she has A.D.D. that is why she can't do housework. I think that is what I have to...my husband finds it funny (sometimes) because I just don't see some of the messes around the house. Lucky for me he is a complete neat freak and when he goes out of time, I really start to understand all the picking up he does around the house. Thank you, honey. Anyways, I decided to spend the day organizing all our drawers and catch up on all the lovely laundry I had piled up. This took A LOT out of me. I am mentally fatigued by all the sock matching and odds and ends that I don't know where to put. But I finished and I feel very proud of myself for that. The kids drawers are now devoid of clothes that don't fit anymore, I have a huge pile to take to Goodwill and I found some of clothes that I forgot about being scrunched up in the drawer. I did take a couple of mental health breaks for a quick workout, I ended up running for 30 minutes and doing a 30 minute weight circuit. I also had the Best Lunch! I made a Pear and Blueberry Quesadilla. This is definitely worth making. I love sweet and savory things and this hit the spot. ![]() Pear and Blueberry Quesadilla 1 La Tortilla Factory Smart & Delicious Whole Wheat Tortilla 1 Red Pear, thinly sliced Handful of blueberries 1.5 oz of Cabot 50% Reduced Fat Sharp Cheddar Cheese Spray non-stick skillet with cooking spray, heat tortilla with pear, cheese and blueberries until cheese is melted about 2-3 minutes. Remove from heat, cut and enjoy! 2nd Mental Health Break included my new favorite Pumpkin Parfait. Wow! I have found a way to really enjoy pumpkin and all the good health benefits that go along with eating it. Pumpkin is full of beta-carotene, an essential antioxidant that fights cancer as well as being a good source of fiber. It is also only 40 calories for a 1/2 cup serving. Pumpkin Parfait 1/2 cup of Fage 0% Greek Yogurt 1 tsp honey 1 tsp pumpkin pie spice 1/2 cup of Go Lean Crunch, divided 1/2 cup of pure pumpkin Mix yogurt, honey and pumpkin pie spice together. Top with 1/4 cup of Go Lean Crunch Cereal, layer with 1/2 cup pumpkin and then top with remaining 1/2 cup Go Lean Crunch. Enjoy. I was craving veggies for dinner and made a Loaded Up Power Salad. Loaded Up Power Salad 2 cups Spinach 1/4 cup chickpeas 1/2 cup Mann's Sunny Shores Broccoli Slaw 1/2 cup fresh broccoli florets 1/2 cup fresh cauliflower florets 1/2 cup orange and yellow tomatoes, diced 1/4 cup red onion, thinly sliced 1/2 cup cucumber, diced 1 tablespoon pepitas Dressed with 1 tablespoon Greek Yogurt mixed with 1 tsp honey, a squeeze of fresh orange juice and orange zest. ![]() I am debating whether or not to have a small serving of Dreyer's Slow Churn Limited Edition Mud Pie Ice Cream in a waffle bowl. Sounds good doesn't it! All in all, a productive day and it feels good to have everything nice and orderly, now let's just see how long I can keep it that way.
