Football Rice Krispie Treats

Here are the other treats I made for my neighbor's Super Bowl party. I had originally planned to make oatmeal sandwich cookies but when I pulled the ingredients out of the pantry, I noticed that I only had 1/2 cup of oatmeal left...oops! So, on to plan B:)

I remembered Annie's blog had football rice krispies treats and after a quick survey of the pantry I decided those would work perfectly. They are of course themed for the occasion but I also liked them because this was a family friendly party and the rice krispie treats are always a hit with the kids.

I don't think Annie actually posted the recipe for these but I assume it was something like this. I just whipped up a batch of rice krispie treats and topped them off with melted chocolate, then piped the lines with white candy melts. Btw, I used the candy melts because melting white chocolat can be tricky.


The chocolate on my cookies was still wet in this picture but it did firm up after about 2 hours. You could always put them it in the refrigerator to firm up a little faster.

These were a hit at the party!

Ingredients:

3 tablespoons butter
1 package (10 oz., about 40) regular marshmallows
- OR -
4 cups miniature marshmallows
6 cups Rice Krispies®

1 cup semi-sweet chocolate chips
1/2 white candy melts

* football shaped, oval or round cookie cutter

Directions:

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add rice krispies cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool.
4. Melt chocolate chips in a small bowl according to package instructions.
5. Melt the candy melts according to package instructions. Pour melted "melts" into a squeeze bottle.
6. Cut out rice krispie football shapes using cookie cutters (I used a round biscuit cutter b/c I didn't have a football shaped cutter)
7. Dip rice krispie footballs into the melted chocolate or spoon and spread the melted chocolate on top.
8. Pipe white melts on in the shape of football laces.

Best served the same day.
