Fried Mutton/Lamb Chops
Ingredients Mutton chops-1/2 kg Ginger chopped-50 gms Green chilly chopped-8 Egg-1 or 2 nos Red chilly powder-1 tsp Turmeric powder-1 tsp divide into 1/2 tsps Salt to taste Method Clean and wash the mutton chops. In a mixer add ginger, green chilly, 1/2 tsp turmeric, salt and grind together to a smooth paste. Mix this paste to the mutton chops and let it marinade for 10 mins. Next add the marinaded mutton chops along with marination and 1/4 cup of water in a pressure pan, pressure cook this mutton chops for 20 mins. When the pressure is released uncover the pan, turn on the heat and cook the till gravy of the mutton chops is dry and well coated on the pieces. In a medium bowl beat the eggs with turmeric, chilly powder and salt ( add little salt for the eggs as the mutton chops are already cooked with salt). Heat tawa or a sauce pan, add 2 tbsp of oil, when oil is hot take each mutton chops dip it in the beaten egg mixture and lay on the hot oil in the pan, you may place up to 5 mutton chops at a time. Reduce heat to medium and fry the mutton chops on both sides until golden brown. Continue the same process with rest of the mutton pieces. Serve hot as an appetizer or can be served along with rice. ( You can make delicious omelet with leftover egg mixture, this egg mixture will be very tasty and flavorful as the masala and juice of the mutton chops is well absorbed by the eggs during each dipping).
