Just recline yourself on your neighbours

Some weeks ago I've got 5 kg raspberries from my other neighbour. He has a good friend who has a big confectionery in our little town. The owner, János Pataki is the president of the International Union of Confectioners, Pastrycooks and Ice Cream Makers.

They use frozen fruits (when they haven't got season) for the ice creams and sometimes give to my neighbour a bigger amount of frozen fruits. But this time he couldn't put in their freezer the big bucket, there wasn't enough place. I'm really lucky with my neighbours...

But there was a problem, there wasn't enough place in my freezer either.



ACACIA FRAGRANCED RASPBERRY JAM


5 kg raspberry
1.5 kg sugar
1 tbsp vanilla pasrte
1 tbsp rose pepper
100 ml Crème de Cassis




Put the raspberries in a big pot, add the sugar, vanilla paste, syrup and crushed pepper. Bring to a boil and reduce to ¾ amount. Take off the heat stir in the liquer and pour in to little sterilized jars. Close them tightly and turn with covers down for 5 minutes.
