Mango Pudding with Coconut Jelly
My youngest sister was having a dinner gathering last weekend with some friends to celebrate her wedding eve day. She had somebody catered for the food already, so I thought of just making some agar agar pudding to top up some extra dessert. I have three pieces of chokanan mango fruit left and so decided to make them into agar agar. The yellow layer of the heart shape jelly was mango pudding while the bottom white layer was coconut milk agar agar with chunks of real mango fruits. As for the other bigger jelly, the white layer was coconut milk and the brown layer was mashed mango fruits. Most of them preferred the mango pudding layer because of the strong mango flavour. I made only 18 pieces of mango pudding because I only have 18 pieces of the heart shape jelly moulds. All were finished at that evening, but I reserved three pieces left in the fridge for my sister who was busy entertaining her guests and no chance to savour it. But, in the end she didn't have any chance either because they were all eaten by two little 'greedy' darling, my niece and nephew! : D
