- In a medium saucepan, add water and black rice.
- Simmer uncovered at low to medium heat for 70 minutes.
- To shorten the cooking time, you can soak the rice a day before.
- Stir in sugar in the last 15 minutes of cooking time.
- Rice mixture will be soft and thickened around this time, so stir gently to make sure it does not stick to the bottom.
- Pour the coconut milk just before serving.
- Serve while it is very hot, but it is equally good at room temperature or cold.
