Mini Cake Donuts ... pretty little things!

It's been a busy last few days and I've hardly had time to come near the computer. blogland even less. Not to say that I haven't been cooking, because I managed to squeeze in a couple of things, one of them being these mini cupcake donuts.

Actually I had taken a trip down to Old Delhi for some work, and couldn't resist stopping by my little shop that stocks baking tins etc. The owner was very happy to see me, and showed me the new stuff he had introduced. One of the things was this mini bundt baking tray. I was sold, and there was no way I could say no to it. He also talked me into buying some hot dog bun moulds, an 8" dessert ring, some bread knives, amongst other bits and bobs.
Now I was obssessed with making mini bundts and saw a TWD post about them, but searches high and low led me to nought. I couldn't find that recipe on any of the TWD blogs, so it was back to googling. That's when I found these interesting sounding mini cake donuts ... at Prepared Pantry!


This is a donut recipe made in a mini bundt cake pan.  The advantage of doing so is baked rather than fried donuts.  They are especially attractive made in the little fluted molds.  These were rolled in cinnamon and sugar mixture.  They could also be rolled in a cinnamon vanilla sugar mixture.

The recipe is simple and very straightforward. The dry ingredients are mixed tin one bowl, and the wet in another, and then the two are stirred together until just moistened. I was a bit concerned to see that the batter was more cookie doughish rather than cupcakish ... but the donut cupckaes did eventually turn out fine! My offical tasters, the kids, loved them plain, with strawberries and also with some mascarpone and strawberries!
Mini Cake Donuts
adapted from Prepared Pantry

Ingredients

1 1/2 cups all-purpose flour

1/2 cup granulated vanilla or plain sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 large egg

1/2 cup butter, melted

1/2 cup milk

1/2 teaspoon vanilla

1/2 cup mini chocolate chips

1/4 cup granulated sugar

1/2 teaspoon cinnamon

Directions

Preheat the oven to 180C. Grease well with melted butter and dust with flour, or spray non stick spray onto mini bundt pan molds,.

Mix flour, baking powder, 1/2 cup vanilla sugar, and salt together in a medium bowl with a whisk.

Beat the egg, melted butter, milk, and vanilla in another bowl. Add the wet ingredients to the dry ingredients and stir just until moistened.

Spoon the batter into molds equally. This will fill 12 mini bundt pan molds.

Bake for 15 minutes or until golden.

While the donuts are baking, mix the remaining 1/4 cup sugar and 1/2 teaspoon cinnamon together.

When the donuts are done, remove them form the mold and roll them in the sugar and cinnamon mixture while they are still warm.
