Mmmm...Kale chips!
Good morning!
This week is just flying by so far! Monday my friend Lindsey came to visit. We didn't get much of a chance during our last meet up as she had to be at an appointment. I made us breakfast Baby potatoes, green pepper, grape tomatoes, and green onion with scrambled egg and cheese. We also had Ezekiel toast. YUM! It was a beautiful warm morning so we got to enjoy eating outside :-) We basically spent the day just catching up and relaxing in the sun! While making lunch we sipped on green smoothies This bad boy was chalked full of goodness! 2-3c spinach, 1c Vanilla Almond Breeze, 1/2 frozen banana, 1/4c frozen cherries, 1/2 avocado, 1 Tsp bee pollen, 2 Tbsp Vanilla Almondilla shake and go, 1 Tbsp hemp hearts. *This was my first taste of the shake and go. I wasn't a huge fan, but in all fairness I need to try it in a simpler form to give a proper review of it* I was totally spoiled, as Lindsey made us lunch!! We used some of the Alaskan King Salmon hubby and I were given. Did you know it's white?! This was new to us ;-) She layered the salmon with fresh lemon, basil and orange slices. Then wrapped it in the foil and cooked at 400 F for approx 20min (our salmon was pretty thick) Lindsey also made us Kale Chips! I've heard about these and seen them in some of my cookbooks. I LOVED them! So easy; wash kale leaves- pat dry. Tear leaves into pieces (approx the size of a saltine cracker) Spread out on cookie sheet. Lightly drizzle with Olive oil and sea salt then give them a toss. Bake in oven at 400F for approx 10-12min. Stay close to the oven and every 4 min or so give them a toss. They are done when they are dry and crispy! I really didn't think these were going to be that great, but I was wrong~ they are awesome! I will definitely be making these again!! I know it doesn't look spectacular but the salmon was so tender and moist with a nice citrus tone and the kale chips have a smokey crunch....Thanks again for lunch Lindsey!! That night hubby and I were totally lazy and didn't want to cook (besides I was out of fresh veg) so we opted for a pizza night. I had 2 small Greek goddess and 1 small vegetarian. Yesterday hubby's work was having their big potluck. I volunteered to make individual sized vegetarian Shepherd's pie... There super tasty and really simple! Just fry your veggie ground round (or beef for you meat eaters) until cooked. Add 1 can low fat cream mushroom soup condensed. (You will need one can of soup per 1 lb of meat/substitute) Simmer and stir until hot and well mixed. Then you just layer. I put 4 Tbsp of ground round on the bottom of these pie pans, or you can put into one large casserole dish. Next layer a mixture of cooked pea's and corn... Next I layered on approx 1/4c mashed potatoes (prepared as you wish). Pop in the oven at 350 for 12min to make sure hot throughout. Sprinkle tops with 2 Tbsp shredded cheese and a sprinkle of pepper. Place back into oven for another 5min. Viola!! You can freeze these and thaw and reheat in the oven for a quick family or single serving meal when your in a hurry! I put one aside for myself of course! I like to add a little Frank's to mine ;-) I was making enough for 15 people so it took a couple hours. All except one person said they enjoyed them and hubby even had 2 of his die hard meat eating coworkers ask if they could take home the leftovers!! SCORE!! The remainder of the day was spent grocery shopping for bread, eggs, milk, and fresh fruit and veggies. We raced home to make dinner as we had severe storm warnings in place. We never got them though.... Here was the rest of yesterday's eats: 2pc of Ezekiel toast with 1 Tbsp Almond Butter & Smoothie; 1c chocolate Almond Breeze, 1 scoop chocolate Amazing Grass superfood, 1 Tsp bee pollen, 1/2 frozen banana, 1/2c frozen cherries. *Insert above picture of Shepherd's Pie* Nectarine... Self explanatory! Garlic Hummus with Pretzel Crisps... 1.5c Penne w/sun dried tomato pesto, grilled asparagus, 1/2 zucchini and mushrooms, 3 small pieces of ww french bread, water. 1/2c Chapman's Black Jack Cherry frozen yogurt w/1 Tbsp cacao nibs. I ended up using 5 Flex points, but I was really craving fries (it's that time again) and I didn't give in. Yay..NSV! I was actually proud of myself. Here was this morning's breakfast I made Angela's Cherry Chocolate Bomb Vegan overnight oats. I love this combo! I used 1/4c oats with 1/2c chocolate Almond breeze and 1 Tbsp chia seeds. For the "soft serve" I used 1c frozen cherries and 1/2 frozen banana. I finished it off with 1 Tbsp cacao nibs. So Good! Well I'd better be off...housework is calling me today! I have a heavy work week next week so I need to get my house done!! See ya tonight! P.S.
