My due-date cake
![]() I had a Birthday recently, it happened to be on a busy Sunday at the end of a busy week. So nothing much happened, apart from a nice cake at our Church's big picnic lunch. So I decided to make a cake a few days after; on my due date. You know, the date that Mum was due to have me. I was due on the 27th of February, the big brothers hoped I would be born on the 29th but I wasn't. Everyone must have been really looking forward to my arrival [or dreading it, depending on how you look at it] because several people, namely my Dad and big sister both think my birthday is on the 27th. So, to remind Mum and Dad to buy me a present and just because I wanted chocolate cake, I made Dana's chocolate cake from Destitute Gourmet! [or a gluten free version of it] ![]() Dana's chocolate cake [GF!] 1 2/3 cups of gf flour mix 1 1/2 tsp of baking soda 1 1/2 cup of sugar 2/3 cup of cocoa 1 tsp of salt 1 1/2 cup of milk 100gms of melted butter 2 eggs 1 tsp of vanilla essence Preheat oven to 180 'c, grease a 20cm cake tin and line bottom. Put all ingredients into your electric mixer [or use a whisk, whatever] and mix until smooth. Pour into tin, bake 50 min to 1 hour, check if done with skewer. Note: I accidentally didn't read the recipe right and used baking powder instead of soda. I turned out great, so I suppose you can use whatever you like. ![]() Yum! Cadbury's pebbles are gluten free! This cake is also really good for chopping in half, you may not be able to see, but it's got buttery chocolate icing through the middle. The gluten eaters loved it. They said that they couldn't tell it was gluten free! It was amazingly easy to make, and had a wonderful result. I'll definitely be making this again!
