New eats!

Ahh, is it already Tuesday? The weekend seemed to really fly by with the 4th of July holiday. Yesterday, my sister and I also went to a housewarming party, and I brought cupcakes like the ones featured at my little bro?s open house.

Some eats over the past couple of days?first off, mashed cauliflower ala JB of cardioVEGsular. I basically prepped these just like mashed potatoes. I steamed the cauliflower and blended it with some milk, butter, and a little feta cheese in the blender and topped it with black pepper. It was so good! It was super creamy, and my mom kept saying that it didn?t even taste like cauliflower. I think it would make a great mock cheese sauce, maybe an alfredo? Certainly a great way to up the vegetable intake.

Something else I randomly whipped up. Organic mac & cheese with spinach. It was pretty good, although the spinach made it a bit watery (it was frozen spinach). I wanted to eat more than just plain noodles and cheese {sauce}, though, so it was of a little more nutritional value.

Last night, my mom cooked the best fish ever. I hate fish that smells and tastes super fishy. I don?t know if I have a sensitive nose or what, but there are just certain smells I absolutely can?t stand. The perch and blue gill we ate last night was perfect and not fishy. My mom made batter from pretzels and flour and fried the fish in coconut oil. We had mango slices and peas {my fave veg} to round out the meal.

Bethany, Ben, and I went out for Chinese food for lunch. The buffet we went to definitely had more fried food than anything else, but moderation is the key, and I don?t feel bad about eating fried Chinese goodness once in a while.
