Nina's RSG Sandwiches

I was fortunate to have a chat with Johan Rademan on RSG on Tuesday, but I am sure you all know that already from following Twitter and Facebook!. Never in my wildest dreams did I anticipate such a response, wow, I was so overwhelmed! Thank you for the wonderful support! I have had so many emails and phone calls of people complaining about their horrible sandwiches that I just have to do this post and share some of my easy, but delicious sandwich ideas. For those who have seen all these sandwiches, please forgive, at least here they are all nicely grouped together.



On Tuesday I made the following sandwiches.



Snoek and Patat Sandwich with Citrussy Hollandaise and Fynbos Honey

I used Patat(Sweet Potato) Bread that I bought from our local bakery.

Buttered the bread, layer fresh butter lettuce, shredded smoked snoek on top.

Serve with halved grapes(white and Black) and some of the Citrussy Holandaise Sauce.

For the hollandaise, I just used this recipe and sweetened it with some fynbos honey.



Caprese Sandwich

Wholewheat bread

Ripe Homegrown tomatoes - sliced

Buffalo Mozzarella - torn in pieces

Basil pesto and a few drizzles of basil oil

Fresh basil.



Roasted Pepper and Goat's Cheese

Onion and Olive loaf - bought from local bakery

Roasted peppers - Pop whole peppers(yellow,green and red) in a hot oven. When they are black, remove and place in a glass bowl and cover with plastic wrap. Let it sweat and then remove the skin off the peppers. Slice in thin strips, season with salt/pepper and preserve in olive oil in fridge.

Goat's cheese

a few fresh sprouts

a drizzle of lemon and some black pepper



Coppa Ham, Rocket and Berry Sandwich with Balsamic reduction

Ciabatta - sliced diagonally

buttered

layer with any kind of ham you like, I used coppa.

fresh blue berries and raspberries

fresh rocket

a drizzle of lemony olive oil and balsamic reduction(buy or make your own)



Cream Cheese, Watercress and Salami Sandwich.

Wholewheat bread

Spread with Cream Cheese and top with fresh watercress and a few slices of salami.

Drizzle with olive oil and some balsamic reduction. Salt and Black pepper.
