Pita Bread

I broke out the bread machine again, this time to make pita bread!  Doesn't it look pretty?  OK, confession time, only a handful came out this pretty. The rest didn't puff up but I know what I did wrong so next time - they will all be this pretty.  I'll explain where I went wrong in the directions.  I found this recipe on Food.com after searching all over the internet for a bread machine recipe for pita that contained whole wheat flour.  Here is what I found - Enjoy!!


What you need:
1 1/3 cups warm water
2 tablespoons olive oil
1 tablespoon sugar
1 1/4 teaspoons salt
2 cups white flour
1 1/3 cups whole wheat flour
2 1/2 teaspoons yeast




What you do:
Place the above ingredients into the bread machine according to owner's manual specifications.

My machine does wet ingredients first then dry with the yeast going last.  Here is my Little Man making a well for the yeast.




Use the dough setting on your machine.
After the program is completed, divide dough into 10 equal pieces; shape each into a smooth ball; place five on each baking sheet.




Let rise for 20 minutes while oven preheats to 500; flatten puffy balls gently into a 6-inch disk.  Here is what I missed - so let me repeat for you GENTLY.  I worked my dough too much and that is why they didn't all puff up.
Bake for five minutes (tops will be puffed and beginning to brown).
