Peel and chop the onions. Remove the seeds from the peppers and cut them into pieces. Cut the tomatoes into pieces.
In a skillet, pour a drizzle of olive oil and sauté the onions.
When they are translucent, add the peppers, chopped parsley, and half of the chopped coriander. Cover and cook for about 10 minutes.
Add the spices, stir, then add the tomatoes. Let simmer for about 20 minutes over medium heat.
Crack the eggs into the skillet, cover, and let them cook for about 5 minutes.
Sprinkle with chopped coriander and serve! Enjoy your meal!
