- Mince the onions, the peppers and the tomatoes.
- In a pan, pour the olive oil and add the onions. Cook until translucent.
- Add the peppers, the chopped parsley, and half of the chopped coriander. Cover and cook during about 10 min.
- Add the spices, stir, then add the tomatoes. Cook during about 20 minutes at medium heat.
- Break the eggs at the 4 corners, cover and let them cook.
- Sprinkle with chopped coriander and serve!
