Raghavdas Laddu, Urad Laddu & Dravya ... Maharashtrian Sweets
Raghavdas Laddu Serves : 12 Time required : 1 hour Ingredients 1 cup ( 200 g ) moong dal 1 cup ( 200 g ) urad dal 1 cup ( 200 g ) wheat 1/2 cup ( 100 g ) rawa ( sooji ) 1 tablespoon ( 15 g ) cashew nuts , chopped 1 teaspoon ( 5 g ) cardamom powder For the sugar syrup : 4 cups ( 800 g ) sugar 2 cups ( 360 ml ) water Method Separately roast the rawa, moong dal , urad dal and wheat till light brown. When cool grind to a fine flour. Heat sugar and water together to obtain a two string sugar syrup. Add all the ingredients and stir well. When cool enough to handle, take small portion and roll into laddus. Makes about 24 laddus. Urad Laddu Serves : 15 Time required : One hour Ingredients 500 g sugar , powdered 250 g urad dal 1 teaspoon ( 5g ) cardamom powder 125 g ghee Method Dry roast the urad dal on gentle heat till light brown. When cool mix all remaining ingredients. Take small portions of the mixture and roll out into laddus. Store in an airtight jar. Makes about 30 laddus. Dravya Serves : 10 Time required : 30 minutes Ingredients 250 g rawa roasted with 1 tablespoon ( 15 g ) ghee 250 g sugar , powdered 1 teaspoon ( 5 g ) cardamom powder 1 teaspoon ( 5 g ) nutmeg powder 250 g ghee Method With one egg beater beat rawa and ghee till light and fluffy. Put in the cardamom powder and nutmeg powder and beat again. Beat in sugar , 1/2 cup at a time . Beat till the mixture is light and fluffy. Chill for half an hour.
Divide into small portions and roll into laddus. Keep them in the refrigerator in hot weather. Store in a cool place away from window or any source of heat. Makes about 20 laddus. Next post... Maharashtrian Snacks
