Raspberry Red Wine Sorbet
![]() As it turns out, sorbet is one of the simplest things to make. It takes so little effort that there is almost no excuse not to make it. Sorbet is always wonderfully refreshing and tangy, and it is guilt-free too. It really can stand alone, but I would never object to pairing it with another, richer dessert. This sorbet is no exception. I found myself wondering if I had actually made it at all. I even checked in the freezer after school today to make sure I had not dreamed it. Sure enough, it was there, bold and magenta. Boy was I excited to taste it. It wasn't quite as bright as I had expected; it was a bit deeper and more robust than I had expected, but it was not unwelcome. I poured a bottle of wine into a large pot. I added 3/4 of a cup of water and a cup of sugar to the pot and set it on the stove. I brought the liquid to a rolling boil and let it continue to boil for another minute. I took it off the stove and covered it with a lid. I set the pot aside for an hour to let the flavor of the raspberries diffuse into the wine. After an hour had passed, the wine had been infused with enough of the raspberry flavor for me to proceed. I poured the liquid through a sieve into a large, plastic bowl. I used a rubber spatula to press the raspberries through the sieve and into the wine. I placed the bowl into the fridge to chill for a few hours. Two hours later, I pulled the bowl out of the refrigerator. I placed it on the counter and set up my ice cream maker next to it. I turned on the machine and cautiously poured the sorbet base into it. I let the ice cream maker run for twenty minutes and then transferred it into a plastic container. I put it into the freezer to continue to harden because it was quite soupy at that point. Sorbet can be quiet and subtle or it can be invigorating and lusty like this one. The color itself is enough to make it enticing, but the flavor definitely does not take a back seat.
