Franui-style raspberry, white chocolate and ruby chocolate bites
We're continuing our Franui recipes and this time, we're going for a sweet and spicy combination: raspberries, a white chocolate coating and a ruby chocolate finishing touch. All homemade and easy to make :) It's the kind of little delicacy we love to take out of the freezer for a quick treat!

Preparation
Place raspberries in the freezer for at least 30 minutes before use.
*If you freeze them for longer, remember to space them out.Melt the white chocolate.
* You can melt it in the microwave (2 x 30 seconds) or in a water bath.
Pierce a raspberry with a wooden pick and dip into the white chocolate.
Place the coated raspberry on a plate or sheet of parchment paper, then repeat with the remaining raspberries. Place in the freezer for at least 10 minutes.
Melt the ruby chocolate in the microwave or water bath.
Prick a raspberry with a wooden pick and dip into the ruby chocolate.
Place the coated raspberry on a sheet of parchment paper and do the same with all the raspberries. Place in the freezer for at least 10 minutes.
And now it's ready!

Yes, it's best to freeze the raspberries before coating them. This allows the white and then the ruby chocolate to congeal quickly around the fruit, preventing it from softening.
