Dinner disaster occurred tonight. Enchilada sauce put up a good fight, but unfortunately I lost….. Since I was in the midst of cooking dinner and making a dessert……tons of things were out on the counter and got covered in enchilada sauce…as did my khakis capris Boooo! Lunch: Lunch was totally easy to throw together this morning, thanks to leftovers from last night’s dinner Veggie couscous and Garden protein [no meat] bbq skewers I also sliced up an apple Snack For my afternoon snack, I decided to give the Carman’s bars I was sent to review another go. In my first review of this bar, I thought the flavor was bland, but I did like the chewiness of it. After today, I’m still just not impressed. After seeing a few more patients and while doing some documentation, I munched on some nuts from my snack stash in my desk Dinner Welp, you’ve already seen the mess I created while cooking dinner. This cookbook was a present from my roommate Lauren [that I lived with before I got married]. It’s full of recipes that she and her husband love to cook! What a great present! The recipe I followed is called Enchilada Shells. I changed it slightly, including the type of shell used, so I renamed it…. Enchilada Roll-ups 6 whole wheat lasagna shells 1 lbs ground turkey 1 can enchilada sauce 1/2 tsp dried, minced onion [Didn't have this so I subbed in 1/4 cup diced onion] 1/4 tsp dried basil 1/4 tsp dried oregano 1/4 cummin 1/2 can fat-free refried beans 1/3 cup cheddar cheese Directions: Preheat oven to 350F. Cook pasta according to directions. Saute onions over medium heat, when translucent, remove from heat for later. Cook ground turkey meat over medium heat. Stir in 3/4 of the can of enchilada sauce, onions and seasoning when meat is brown. Set meat mixture aside. Lay cooked shells out flat on wax paper. Spread a rounded spoon of refried beans on each shell Add turkey mixture to shells, next Roll shells up tightly and add to a baking sheet sprayed with non-stick spray I ended up adding more refried beans to the top since I didn’t have the remainder enchilada sauce to add on top. Cover with aluminum foil and bake for 20 minutes, then top with cheddar cheese and bake for an additional 5 minutes. I enjoyed 2 roll-ups for my dinner. They were pretty tasty, except they definitely needed some more enchilada sauce! Dessert Looks pretty good, but didn’t taste quite right. Don’t get me wrong, I still ate every last bite, but let me perfect this recipe before posting it Question of the Night: What’s the best present you’ve ever received???
