Sesame Noodles with Chicken and Veggies

By Katie's Cucina (Visit website)

I was inspired to make this super easy dish after I looked at multiple Asian noodle recipes! I threw it together for lunch the other weekend on a whim! This makes for a great lunch or dinner any day of the week, and tastes even better than take-out food! This is my version of home Chinese take-out!
Prep: 1 minutes
Cook: 15 minutes
Serves: 4
Ingredients:1 tbsp sesame oil1 bag of frozen Asian style vegetables2-4 skinless boneless chicken strips1/2 package of barilla plus thin spaghetti1 tbsp salt for water1 cup (Publix brand) Roasted Asian Sesame Salad Dressing1/2 tsp of red pepper flakes (optional, only if you want it spicy) 2 stalks of green onions, diced Directions
1. In a large pot bring water to a boil, add salt, and 1/2 package of pasta. Cook until al dente, drain, and put to the side.

2. On medium-high heat add the sesame oil to a skillet. Clean and cut chicken strips into bite size pieces. Add to skillet, browning both sides. *You can also use left over shredded chicken or diced chicken if you have it on hand.

3. Push the cooked chicken to the sides of the skillet, and add the bag of frozen vegetables. Place lid on skillet and cook for 5 minutes.

4. Add pasta, 1 cup of dressing, red pepper flakes (if you want to make it spicy), and 3/4 of the green onions to the skillet. Stir until everything is incorporated. Cook on low for 5 minutes.

5. Plate and add a few fresh diced green onions to the top of the dish! Enjoy.

Tip: There are 2 ways you can transform these leftovers!
Asian style wraps: All you need is a half cup of the mixture and a flour tortilla. You can add extra dressing if you wish. You can eat it cold or heat it up!  Sesame Asian noodle soup: Take at minimum 1 cup of the leftover mixture and add a 32 oz carton of chicken broth to a pot. Bring to a boil, and voila! You have a tasty and easy Asian style soup! *If you have a lot of the mixture leftover you might need to add multiple boxes of broth... eyeball--you'll know when it looks right!
