Snack, Dinner and Dessert- Butterscotch Bar
Before heading out to teach Kids In Motion, I geared up with on of my favorites fruit and cottage cheese. Today's combo was a perfectly ripe pear, a small amount of cottage cheese and a little bit of Fage 0% Greek Yogurt topped with a few almonds. Yum. This hit the spot and gave me the right amount of protein (cottage cheese + Fage) carb (pear)and fat (almonds). I have to tell you the combo of cottage cheese and greek yogurt is delicious! I was at the very end of the cottage cheese container and there was literally 1 tablespoon left (hmm... who did that...) so not enough for my little bowl of goodness. Pear and Cottage Cheese Crunch 1 tablespoon of Cottage Cheese 1/4 cup of Fage 0% Greek Yogurt 1 small pear 6 Blue Diamond Oven Roasted Cinnamon Brown Sugar Almonds After class (which turned out great... we made lion masks and worked on lion pose as well as had an Easter Egg Hunt-- or Spring Egg Hunt, we headed to the library where Emmet picked up all the Star War books, and Zoe picked up her first chapter book (she is in Kindergarten)Hank the Cowdog and I picked up some cookbooks as well as gardening books. I love the library-- the Bee Cave Library is new, open less than a year, is very cute and small and the librarians are extremely NICE. I am glad the kids love to go there every week. Dinner was a scrumptious Sweet Potato with Rainbow Chard, Aspargus and Balsamic Tofu I sauteed 1/4 a red onion and asparagus in a splash of Extra Virgin Olive Oil and a little sea salt. I then added the Rainbow Chard and sauteed for a few minutes more. I had baked the sweet potato in the oven earlier in the day at 350 degrees for 45 minutes. I topped the whole meal with a little Balsamic Roasted Tofu- I am telling you this stuff is the best. You can put it on salads, you could make a Tofu Salad Sandwich (that sounds good... may tomorrow for lunch) throw it in your eggs... I think I might bake or roast some more tofu tonight. This was a quick throw together meal and extremely healthy! So I broke down and ate a Butterscotch Bar! These are soo good! It has oatmeal in it so no wonder I love them so much. I froze them so I would not have them looking me in the face all day... but they have been on the brain all evening... should I or shouldn't I.... I had one- enjoyed every bite of it and am moving on! Gotta finish up homework with the kids! Have a great night! related searches : Snack
