Ingredients

Number of serving: 6
1 cup / 155 g self -raising flour

3 Plums, diced

2 Medium eggs

2 tablespoons . canola oil

3/4 cups / 145 g Soft brown sugar

150 g / 5 oz Greek yogurt (plain)

Preparation

  • Grease a mini-muffin pan. Set aside.
  • In a medium bowl add the eggs, sugar, oil and Greek yogurt.
  • Mix all ingredients, until creamy. Add the flour and plums to the egg mixture.
  • Gently fold until just combined.
  • Pour mixture into the mini-muffin pan and bake for about 20 minutes or until lightly golden.
