Observations
How long does pasta with zucchini and Greek yogurt keep?
We recommend that you eat it right away. However, you can store it 1 day in the refrigerator in an airtight container.
Can I use the skin of the zucchini?
Yes of course. We preferred to peel them to give the dish a more delicate taste.
What pasta format to use?
For zucchini and Greek yogurt pasta we recommend using a long pasta format (spaghetti, linguine, spaghettoni). If you prefer short pasta, you can try fusilli, mezze maniche, pennoni or rigatoni.
Can I serve zucchini and Greek yogurt pasta cold?
Yes. In this case, do all the steps as if you were making a pasta salad and use a short pasta format: prepare the sauce, run the cooked pasta under water to stop the cooking and toss it with the yogurt and zucchini sauce. Let it cool to room temperature, then put it in the refrigerator.
What can I use instead of Greek yogurt?
This creamy paste can also be made with unsweetened white yogurt or skyr.
What can I add to pasta with zucchini and Greek yogurt?
To give this dish even more flavor and freshness, you can add chopped fresh mint and grated lemon zest.
