Preparation
- Bring salted water to a boil in a large saucepan. Meanwhile, prepare the sauce: wash the zucchinis and cut them into small cubes.
- Put a drizzle of oil in a frying pan and brown the garlic clove, then add the zucchini pieces and cook for 4 minutes over high heat.
- Cook the pasta following the package instructions. Remove the garlic from the zucchini and add a little pasta cooking water. Then continue cooking over high heat for 7/8 minutes (if the water is completely absorbed, you can add more).
- Season with pepper (and salt if you like) and add the cream cheese to the pan, then mix well over low heat. Add a little more cooking water if necessary.
- Drain the pasta al dente and pour it into the pan. Add the grated parmesan and stir until the sauce is well incorporated into the pasta.
- There you are ! Your creamy zucchini pasta is ready!

How to store these pastas?
You can store them in the refrigerator for 2 days in an airtight container.
Before serving, you can add a little cream to thin the sauce.
What is the best size of pasta to use?
We advise you to use short pasta such as rigatoni, paccheri, penne, tortiglioni, fusilli or farfalle.
How to cut zucchini for pasta?
We preferred to leave them in cubes to preserve the crunchy side of this vegetable! But if you wish, you can grate them, or cut them into brunoises for more fondant.
What can I use instead of cream cheese?
You can replace it with goat cream cheese or cream!
Can I eat creamy pasta cold?
Absolutely ! You can make a classic pasta salad, so you will need to drain the pasta and run it under cold water to stop the cooking. Then, dress them with the creamy zucchini and cream cheese sauce and keep the salad in the fridge until ready to serve!
