Superman Bananas With Coconut Flour Crepes
No matter how simple, fun, and delicious these are, I would have attempted them based on the name alone! What young boy wouldn't eat something called "Superman Bananas?!" (You'll have to go to Restoring Simplicity's site to see an explanation of the name.) My picky 5 year old said they "smelled weird", which is his new thing. We've had a talk about what is impolite when someone serves him food. At least he didn't tell me that it looked like dirt bombs. (Yes, he has actually said this in reference to my cooking.) After his big brother came in the kitchen to tell me how much he liked them, Holden did take a bite. "It's good, Mom!" he said, put his plate on the counter, and marched out of the room. He's not much of a breakfast eater. Melissa at Restoring Simplicity used tortillas, but since I didn't have any on hand, I made coconut flour crepes. It sounds fancy, but is not hard at all. 2 eggs + 2 Tbsp coconut flour + 2 Tbsp milk (I used coconut milk). Add in a little natural sweetener like stevia and/or a dash of cinnamon if you'd like. I didn't. Whisk it together and pour by the spoonful onto greased, hot griddle. Cook for a minute or so and then flip. The original "Superman Bananas" used whole bananas. My kids won't eat that much, so I halved the bananas and made 4-5" crepes. The white things on top are the last of my homemade marshmallows. Raisins, chopped nuts, or chocolate chips would also be fun. Or how about organic sprinkles! Note: I find that renaming recipes can sometimes make a dish more appetizing to my kids. "Superman Bananas" worked for us, but if your family isn't into Superman, "Banana Tacos," or "Monkey Roll Ups" might do the trick. ;) I'm giving away a 16oz bag of coconut flour.
