Swamped and forgetful!

Good afternoon! I for one am so happy today is almost over. I've been SWAMPED with homework. YUCK! Today was all reading and tomorrow begins the writing of far too many essays. Oh joy ;)

Of course, being so busy and preoccupied also ment that I've been rather forgetful and I have completely forgotten to take pictures of my eats today! No worries though, I swear it wasn't too awfully exciting. I did not forget, however, to take pics of the two Lara bars that I happily devoured yesterday as a yummy afternoon snack.The cashew cookie flavor is by far my favorite!Apple pie is pretty good too.That's what they look like sans wrapper. I also really like the peanut butter flavor. There are many other flavors, but I have yet to try them. Give me time though; I surely will ;)

Being pressed for time today also ment food wasn't so much on my mind as usual. With that being said, I still remembered my butternut squash! I opted to bake the whole thing instead of grilling the other half. It was delicious! I didn't so much enjoy the prepping part however. Too much cutting and peeling for my taste; as I'm sure I've mentioned before, I am no chef! The simpler the better for me. The outcome was worth it though, I have to admit. I ate the entire squash in small portions throughout day, often paired with grilled chicken (I love me some protein!).Here's a pic of the finised product:I'd describe this pulpy gem as tasting a lot like an interesting combination of pumpkin and sweet potato, although much less sweet.

I wish I had taken pictures of the prepping part for you to see. It was hard work! For a generalization though, you just cut of the ends, cut in half, scoop out the seeds and pulp, and peel it (good luck with the last part). Pre-heat your oven to 425 degrees and let the squash bake for 45-60 minutes. Then before you know it you'll be eating a scumptious squash...bon apetite!

My work outs have been phenominal by the way! Just this morning in fact, I promptly started my day with a sweat inducing circuit workout, aka Jillian Michael's 30 Day Shred. I LOVE this work out! It is a great challege and really wakes me up in the morning. And later this evening I will be headed off to the gym to lift some weights (shoulders/chest day!) and perhaps get in some extra cardio as well.
