The Great Greek Biscotti: Nistisima Paximadia me Sokolata (????????? ??????????? ?? ????????)

Sick and tired of buying semi stale Greek cookies from our local Southern Californian Byzantine-Latino headquarter joint and in desperate need of a lent friendly bakery item, I came across (well actually I read daily) my favorite Greek-Canadian food blogger extraordinaire's, Kalofagas, recipe for Nistisima (Lenten) Paximadia. Paximadia are twice baked cookies reminiscent of biscotti and often found laced with orange rind, cloves and sesame seeds.  Paximadia go absolutely perfect with Greek coffee and are eaten for breakfast or an afternoon snack. I made Kalofagas's version the first time, and they were gone in a matter of days. The second time around I added carob chips from Whole Foods. Both times my dad high jacked the container and fled to his office, making for another episode of watchdadeat.com.  He shares with me (rightfully so!) and no one else. Kalofagas's recipe results in killer Greek (and lent friendly / vegan) biscotti.
Paximadia, Greek Coffee and Taxes

Chocolate Chip Nistisima Paximadia (????????? ??????????? ?? ????????)
Ingredients:

Zest and juice from 1 orange
3/4 cup vegetable oil
1/2 cup dry white wine
1 1/2 tsp cinnamon
1/4 tsp ground cloves
3/4 cup sugar
1/4 tsp baking soda
1 Tbsp baking powder
1/2 cup chopped roasted almonds
3 cups all purpose flour (I mixed whole wheat and white)
1 cup carob chips
sesame seeds

Directions:

Pre-heat oven to 350 F. Combine orange juice, zest, wine, oil, cinnamon, cloves, baking soda, baking powder, and sugar in a bowl until well mixed. Add almonds. Add flour cup by cup, mixing enough flour until dough no longer feels tacky. Add carob chips.
Gather dough into a ball and divide into 3 pieces. Form into three loaves. Places sesame seeds on some wax paper and then place a loaf of dough on it. Wrap the wax paper around the loaf so the sesame seeds stick to the dough. Repeat with the two other loaves.
Place tray on middle rack and bake for 30 minutes. Remove from oven and cut the loaves into slices with a serrated knife. Arrange the cookie slices flat on the baking tray.
Turn down oven temperature to 300F and bake for another 10 minutes. Then turn off oven and allow cookies to cool in the warm oven.

Remove the Paximadia and store in airtight container for up to 6 weeks (as if they'd actually be around for that long).
