THEPLA - FENUGREEK LEAVES ROTI

Singapore is a standing testimony to how one man's vision can turn around the fate of a country. Singapore continues to flourish under the guidance of Minister Mentor Lee Kuan Yew. See the country lacks natural resources, but how the city houses the best banks in the world, how tourists flock every year and how expats love to live here is what i often ponder on. Well attribute the growth to its infocomm infrastructure, use of latest technology and the governance.

I must say Singapore EXPO has the best convention and exhibition centre in Asia.Yes truly the best of what i have seen so far. Ranging from consumer exhibitions to trade exhibitions, party and receptions, all under one roof.

We have frequented EXPO and always came back with a fat bill. The Robinsons sale ,John Little , Popular sale are all a shoppers heaven.

I have been fortunate to meet the living saint AMMA Amritanandamayi ,when she held a religious meeting last year, in EXPO. Will definitely post the divine experience in another post. Namaskarams to AMMA.

After a heavy breakfast of theplas and curds, we decided to graze through the book sale at EXPO. Theplas are a gujarati 's staple diet . Nutritious and tasty. Fenugreek leaves have a lovely flavor, You can add dried fenugreek leaves to sabzi, dals and snacks. It is a must have on my kitchen rack.
Ingredients:

KasturiMethi 1/4 cup
Wheat flour 1 cup
Turmeric 1/2 tsp
Redchilli pwd 1 tsp
Jeera pwd 1 tsp
Ajwain 1/4 tsp
Coriander pwd 1/2 tsp
Sugar 1 tsp
Green chilli 2
Ginger 2 tsp
Oil 2 tbsp
Coriander leaves 3 tbsp
Salt
Curd 3 tbsp

Method:
1) Grind chilli and ginger to a paste. Mix all the ingredients well and add the chilli paste.
2) Add water if required, since we are adding in curd.
3) Set aside the dough for 10 minutes. Place a wet cloth on the dough to soften.
4) Make rotis and fry on tawa. Add oil on both sides and fry the roti.
5) Serve hot with coriander chutney and curd.
6) This can be stored for about 3-4 days. Cool to room temperature and store in air tight box.

Thepla also makes the best travel food for vegetarians. Easy to carry and can be enjoyed on its own.
