Easy Chicken Alfredo

 Ingredients:



1 jar Bertolli Garlic Alfredo sauce (15 oz.), or other flavor Alfredo sauce
1 small pkg. whole wheat linguine pasta.
2 chicken breasts
McCormick's Montreal Seasoning 
Grilled seasonal veggies (optional)
Directions:

While I am waiting for the water to boil to cook the pasta, I plug in my George Foreman grill and begin grilling at least 2 chicken breasts. I like to season them with McCormick's Montreal Seasoning (my fav!). I boil the pasta as directed on the box, drain after boiling, then mix the sauce and pasta together back in the pan and keep on low heat. When the chicken is thoroughly cooked, I cut it into small pieces, and add it to the pasta/sauce mix. Serve immediately! Since it's just me and my husband in our house, we have leftovers for several days. Yummy!





Avocado BLT Sandwiches

 

It's good and easy.

Ingredients:



4 slices of bread, any kind
3 slices of turkey breast
8-10 pieces of bacon, cooked
sliced cheese, any kind
1 avocado, sliced
lettuce (optional)
mayonnaise
Directions:



Spread slices of bread with mayo or whatever condiment you like. On one slice of bread, pile on the turkey, bacon, and cheese. On the other slice, place the avocado and lettuce. Put them together, and you have a delicious sandwich that's good any time of the day.

Lime Kale Chips

 

Quick and easy kale chips. A healthy alternative to potato chips.

Ingredients:



1 bunch kale (washed)
2 Tbsp. extra virgin olive oil
2 Tbsp. fresh lime juice (alternatively, you may use sherry or balsamic vinegar)
1/2 tsp. sea salt
Directions:



Preheat your oven to 350 degrees F.

Cut or tear kale into 1 inch pieces. Place kale in a medium-large bowl. Toss kale in oil, lime juice (or vinegar), and salt.

Place kale on baking sheet lined with wax paper. Bake at 350 degrees F for 5-7 minutes until kale is crispy.
