Tiffany Blue Almond Frosting
I am a HUGE fan of Isa Chandra Moskowitz and Terry Hope Romero, especially their collaboration book Vegan Cupcakes Take Over the World. This morning (yes for breakfast) I decided to make their Simply Vanilla Agave Cupcakes. I've made several of the recipes from this book but for some reason always looked past this one. They turned out really good! I took them out of the oven at 17 minutes instead of 20-22 because they started to turn a dark golden brown and I was afraid they would burn if I didn't. I'm guessing the cooking time changed from regular sugar recipes because the agave cooks differently, but who knows. They kind of tasted like Golden Grahams the cereal, which is fine by me! Mmmmm yummy! Tiffany Blue Almond Frosting 1 1/2 C Confectioners Sugar 1/2 C Vegetable Shortening 2 Tbsp. Soy Milk 1 tsp.
