Apple cake with caramel sauce

Ingredients

• 1 cup oil
• 2 cups sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 3 cups flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup chopped nuts
• 3 cups apple chunks (preferably Red Delicious, approximately 3 large, peeled and cored)
• Caramel Sauce (recipe follows)

Caramel Sauce:

• 1 cup light brown sugar
• 1/2 cup butter
• 1 teaspoon vanilla extract
• 1/4 cup cream or evaporated milk
