How is everyone??! Sorry about the avocado picture not working….boggles my mind. It’s an ugly, ugly day here in V-town. So I decided to stop at the WD before work to add some sweetness to my day. Then I was off to work at the pharmacy in our new Tuesday scrubs. Is it just me, or do I look like a big Tiffany’s box? Also while at Winn Dixie, I got some ingredients the make the first thing people think of when they hear avocodos. Some good ol’ fashioned guac! But this is anything but ol’ fashioned, because this is total clean-eating style! (None of the mayo or sour cream found in traditional guac.) The recipe came from my beloved Tosca Reno in her first Eat-Clean cookbook. 3 ripe avocados, fresh lime juice, cilantro, purple onion, 1 clove garlic, sea salt and fresh black pepper Pair it with some of Stacy’s Pita Chips, and you’ve got yourself a totally clean snack! I just have to say that making this totally clean snack was, pardon my French, a pain in the dupa! All Tosca said to do was to mix these ingredients. And try as I did, I could not get these avocado fleshes to mash! I tried a masher, a fork, sqeezing individual pieces with my (washed a second time) hands, I even recruited the pilot’s muscles to help me and when THAT didn’t work, I knew something was wrong! I finally concluded they weren’t ripe enough, took it all out and chopped up pieces of the avocados. I’m going to try to mash them again tomorrow but I had to give up for tonight. It is still quite tasty though! Have a great night! Discussion: The pilot and I finally watched Food, Inc last night. We seem to have somewhat opposing views. What are your thoughts on the movie and/or book?? I’d love to hear some insight!
