This is my dad’s favourite dish. It is simple, easy, quick, delicious and vegetarian. My dad always said this dish is nutritious and good for health. I like it because it’s a little sour and sweet. It’s delicious with rice or even scooped over noodles or pasta. My children don’t like raw tomatoes but they like this Tomato and Coriander Egg.


This dish just reminds me of all the wonderful time that I had with my dad, playing all sorts of games each day when he came back home from work. He never run out of ideas to play with us. It was during all those fun time  that he taught us all the important lessons about life that shaped each one of us and made us who we are today. He was always there for us.


My dad said that tomatoes are very good for health. We used to plant our own tomatoes and the eggs were from our own reared chicken. My grandma used to plant a lot of coriander where she pounded and juiced every morning to drink for health. So, making this dish was easy, cheap and healthy.


The recipe is very simple, only 3 ingredients.


Ingredients

4 tomatoes (washed and cut into eight wedges each)

4 eggs (lightly beaten)

handful of coriander (washed and chopped)

salt

sugar

Heat up some fried ginger oil in a pan. Pour in the beaten egg. Stir before it becomes an omelett.

Add the tomato pieces and coriander. Add some salt and sugar and mix well. Adjust the seasoning according to taste. Turn off the fire and dish up onto a plate. Do not overcook this dish. We love it with rice. I’m sure it would be great with pasta or noodles too.
