- Heat oil in a kadai, add the fennel seeds, when they splutter add the onions, curry leaves and saute well. Add turmeric powder, salt and saute a min. Add the eggs and scramble them well. Add the rice and mix well, add the pepper powder, ajinamoto and mix well on medium high flame. Convert to a serving bowl.
- 2)Puliodharai:
Heat oil in kadai, add the mustard seeds, urad dal, groundnuts and saute till they brown. - Add the red chilly, curry leaves till they splutter. Add the tamarind juice and put on boil. When the juice t hickens a little, add the ground powder, salt, turmeric powder and mix well. When the juice t hickens a little, add the ground powder, salt, turmeric powder and mix well. Mix it with the cooked rice and add enough oil and mix well.
- 3. Brinjal Kootu:
Heat oil in kadai, add the mustard seeds, urad dal and saute till they splutter. Add the onoins, curry leaves and saute them well. Add the tomatoes and saute till they get mashed. Add the brinjal, turmeric powder, salt, red chilly powder and saute well. Add water just to immerse the veggies and cover cook for 5mins. Uncover and mash them lightly and adjust taste. Add the grated coconuts and cook till the kootu consistency is reached.
