Cook rice, as directed .
Thaw peas and carrots, set aside.
Softly scramble eggs in medium skillet or wok. Set aside in small dish.Add oil to pan, then stir in scallions, garlic, carrots and peas, soy sauce; cook about 2 minutes.
Add in scrambled egg, combine thoroughly.Stir in cooked rice.
Combine well. Serve.*Alterna*Alternately you could add stir fried meat of your choice to this dish and have a whole meal.*
