Alert to all tiramisu lovers, here are some completely addictive mignardises: rochers tiramisu-style :-) These little marvels combine everything we love in a classic tiramisu: a creamy mascarpone, a touch of coffee and a cocoa coating. Perfect for a snack or to round off a meal in style, these rochers are as delicious as they are easy to prepare ;-)

- 1 chopper/blender
- electric mixer
Preparation
- Blend the cookies into a powder.
- Separate the egg whites from the yolks and beat the egg whites until stiff.
- Whisk the yolk with the sugar and vanilla extract until pale. Stir in coffee.
- Add the mascarpone and whisk again.
- Add the cookie powder to the mixture and stir.
- Finally, gently fold in the stiffly beaten egg whites using a Maryse/spatula.
- Cover the bowl with cling film and chill for at least 3 hours.
- Form balls from the cold mixture and roll in unsweetened cocoa powder. Chill for 1 hour.
- Re-roll in cocoa powder if necessary.
- And now it's ready!

They can be replaced by boudoirs. They are drier, so you will only need 3.5 oz (for 18 portions).

You can make whipped cream with 30% fat cream (10cl), mascarpone (9 oz), powdered sugar (1 tablespoon), vanilla extract (1 teaspoon), coffee (1 tablespoon) and mix it with the spoon cookies.

You can keep them for up to 3 days in an airtight container in the fridge.
