Tiramisu cake log

When you love Tiramisu, make it the perfect dessert for a Christmas dinner! Here are the steps with a video to make this italian dessert into a log!

Ingredients

Chocolate ganache :

3/4 cup cream



The mascarpone cream:

9 oz mascarpone

1/2 cup whipping cream

1/3 cup sugar

2 tbsp cream

1 gelatin sheet

30 lady fingers

3/4 cup coffee

powdered cocoa

meringues

grated coconut

Materials

Cake mold
Plastic foil
Electric whisk

Preparation

  • Step 1 - Tiramisu cake log
    Chocolate ganache :
    Bring the cream to a boil. Pour it on the chocolate, and stir until the mix gets smooth. Take aside at room temperature.
  • Step 2 - Tiramisu cake log
    Mascarpone cream :
    Put the gelatin sheet to soak into cold water.
    In a bowl, put the mascarpone, the sugar and the cold whipping cream, and whisk until you get a firm cream.
  • Step 3 - Tiramisu cake log
    Heat the 2 Tbsp of cream, and melt the soaked gelatin sheet in it. Then, add this mix to the mascarpone cream and mix well. Put in the fridge.
  • Step 4 - Tiramisu cake log
    Line your cake mold with plastic foil. Dip quickly a lady finger into the cold coffee, and cover the mold bottom with the biscuits.
  • Step 5 - Tiramisu cake log
    Then, cover them with chocolate ganache. Add half the mascarpone cream on top of it.
  • Step 6 - Tiramisu cake log
    Spread it out, and make a second layer of lady fingers soaked in coffee. Cover them with chocolate ganache again, and make a seond layer of mascarpone cream.
  • Step 7 - Tiramisu cake log
    Cover with a final layer of soak lady fingers, and put the last layer of chocolate ganache. Put the mold in the fridge for at least 3 hours.
  • Step 8 - Tiramisu cake log
    Unmold the log on a dish, and take the plastic foil out. Sprinkle with powdered cocoa, and decorate with some meringues and grated coconut.
  • Step 9 - Tiramisu cake log
    There you are, the Tiramisu log is ready!
