Tiramisu with raffaello, the best coconut dessert
Our love for coconut desserts is no longer in doubt... In verrines, in rolled cakes or even in flans, this sweet fruit adapts to a whole host of sweet recipes that we love! And yet today, we think we have found our favorite coconut dessert: Raffaello tiramisu! These little crispy balls made of wafer, white chocolate, almonds and coconut are irresistible, and combined with the deliciousness of a tiramisu as soft as a cloud... - 8x12 inches oval gratin dish
- chopper, blender
- electric whisk
- piping bag
Preparation
- Place the Raffaello in the mincer. Add the grated coconut and mix.
- Place the cold mascarpone (or cream cheese), cold cream, cold coconut cream and icing sugar in a (cold) high-sided bowl and beat until thick.
- Add the previous mixture and incorporate it well by mixing again. Transfer everything to a piping bag.
- Pipe the cream into the bottom of the mold.
- Soak the biscuits in milk.
- Place the biscuits side by side in the mold on top of the cream.
- Cover the ladyfingers with cream.
- Add soaked ladyfingers again, over the entire surface of the cream.
- Pipe a little cream into the gaps and smooth with a spatula or spoon so that the top is flat.
- Pipe balls of cream irregularly on top of the tiramisu. Refrigerate for at least 30 minutes.
- Fill the holes with Raffaello and sprinkle with grated coconut. It's ready! You can also decorate the tiramisu with toasted flaked almonds!
Observations
How to store Raffaello tiramisu?
Cover it with cling film and place it in the refrigerator. You can keep it for maximum 5 days.
Can you freeze Raffaello tiramisu?
You can, this tiramisu does not contain eggs. Place it in the refrigerator the day before.
Can we cut the recipe in half?
You can easily divide the ingredients in half. We recommend using only coconut cream for an even stronger coconut taste!
Can we replace the lady fingers?
You can replace them with cookies if you wish! The biscuit layer will be thinner so you will need to make more and make thinner layers of cream too!
How long to keep tiramisu in the fridge?
You can keep it in the fridge for up to 5 days. It will of course be better the next day but you can make this tiramisu and refrigerate it for just 30 minutes so that it is fresher.
