Preparation
Make the caramel : in a pot on medium heat, put the sugar and some water, and leave until caramel forms. Immediately take it out of the heat and pour it into a cake mould.
Beat the eggs and add the coconut milk. Stir, and add the condensed milk, and mix well.
Add the grated coconut and stir. Pour this batter into the cake mould where you have poured the caramel before.
Put the mould into a deep dish and fill it with boiling water to make a water bath.
Bake 45 minutes at 360°F. A knife blade should come out clean, or your flan is not baked yet.
Cool it down properly before unmoulding it. There you are, your coconut flan is ready !
